Canarian Stew, also known as Puchero Canario, is a traditional dish from the Canary Islands that is hearty, flavorful, and perfect for a comforting meal. This stew is a combination of meats, vegetables, and legumes, simmered together to create a rich and satisfying dish.
Ingredients
- 1 lb beef, cut into chunks
- 1 lb pork, cut into chunks
- 1 chorizo sausage, sliced
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, peeled and cubed
- 1 cup chickpeas, soaked overnight
- 1 cup white beans, soaked overnight
- 1 bay leaf
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups beef or vegetable broth
Instructions
- In a large pot, brown the beef and pork over medium heat.
- Add the chorizo, onions, and garlic. Cook until the onions are soft.
- Stir in the tomatoes, carrots, potatoes, chickpeas, white beans, bay leaf, paprika, salt, and pepper.
- Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 2 hours, or until the meats are tender and the flavors have melded together.
- Adjust the seasoning if needed and serve hot.
