Ingredients

  • 1 lb beef, cut into chunks
  • 1 lb pork, cut into chunks
  • 1 chorizo sausage, sliced
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, peeled and cubed
  • 1 cup chickpeas, soaked overnight
  • 1 cup white beans, soaked overnight
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups beef or vegetable broth

Instructions

  1. In a large pot, brown the beef and pork over medium heat.
  2. Add the chorizo, onions, and garlic. Cook until the onions are soft.
  3. Stir in the tomatoes, carrots, potatoes, chickpeas, white beans, bay leaf, paprika, salt, and pepper.
  4. Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 2 hours, or until the meats are tender and the flavors have melded together.
  5. Adjust the seasoning if needed and serve hot.
