Canelons De Col Andorrans (andorran Cabbage Rolls)
Canelons de Col Andorrans, also known as Andorran Cabbage Rolls, are a traditional dish from the small European country of Andorra. This hearty and flavorful dish is a perfect representation of Andorran cuisine, featuring a delicious combination of cabbage, meat, and spices.
Ingredients
- 1 head of cabbage
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup cooked rice
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups tomato sauce
- 1 cup beef broth
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves, trying to keep them whole, and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a large bowl, mix the ground beef, onion, garlic, cooked rice, paprika, cayenne pepper, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the cabbage rolls in a large baking dish. In a separate bowl, mix the tomato sauce and beef broth, then pour over the cabbage rolls.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes.
- Serve the canelons de col hot and enjoy!
