Canh Chua

Ingredients
- 1 lb white fish fillets, cut into chunks
- 4 cups water or fish stock
- 1 cup pineapple chunks
- 2 tomatoes, cut into wedges
- 1 cup okra, sliced
- 2 tbsp tamarind paste
- 3 tbsp fish sauce
- 2 tbsp sugar
- 2 red chilies, sliced
- 1 bunch of Vietnamese coriander (rau răm) or cilantro
- 1 bunch of scallions, chopped
- Salt to taste
Instructions
- In a pot, bring the water or fish stock to a boil.
- Add the pineapple, tomatoes, and okra to the pot and cook for 5 minutes.
- Add the tamarind paste, fish sauce, and sugar to the pot and stir to combine.
- Add the fish fillets and red chilies to the pot and simmer for 10 minutes.
- Adjust the seasoning with salt if needed.
- Garnish with Vietnamese coriander and scallions before serving.
