Canh Chua

Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 4 cups water or fish stock
  • 1 cup pineapple chunks
  • 2 tomatoes, cut into wedges
  • 1 cup okra, sliced
  • 2 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 2 red chilies, sliced
  • 1 bunch of Vietnamese coriander (rau răm) or cilantro
  • 1 bunch of scallions, chopped
  • Salt to taste

Instructions

  1. In a pot, bring the water or fish stock to a boil.
  2. Add the pineapple, tomatoes, and okra to the pot and cook for 5 minutes.
  3. Add the tamarind paste, fish sauce, and sugar to the pot and stir to combine.
  4. Add the fish fillets and red chilies to the pot and simmer for 10 minutes.
  5. Adjust the seasoning with salt if needed.
  6. Garnish with Vietnamese coriander and scallions before serving.
