Ingredients

  • 500g white fish fillets, cut into chunks
  • 1 cup tamarind pulp
  • 4 cups water
  • 2 tomatoes, cut into wedges
  • 1 cup pineapple chunks
  • 1 cup okra, sliced
  • 1 cup bean sprouts
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 2 red chilies, sliced
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a pot, combine tamarind pulp and water. Bring to a boil, then strain to remove the seeds and fibers.
  2. Return the tamarind liquid to the pot and add fish sauce, sugar, and salt. Bring to a simmer.
  3. Add the fish, tomatoes, pineapple, and okra. Cook for 10 minutes.
  4. Add bean sprouts and chilies, cook for an additional 5 minutes.
  5. Remove from heat, garnish with cilantro, and serve hot with steamed rice.
