Canh Chua (sweet And Sour Tamarind Soup)

Ingredients
- 500g white fish fillets, cut into chunks
- 1 cup tamarind pulp
- 4 cups water
- 2 tomatoes, cut into wedges
- 1 cup pineapple chunks
- 1 cup okra, sliced
- 1 cup bean sprouts
- 2 tbsp fish sauce
- 2 tbsp sugar
- 2 red chilies, sliced
- 1/2 cup fresh cilantro, chopped
- Salt to taste
Instructions
- In a pot, combine tamarind pulp and water. Bring to a boil, then strain to remove the seeds and fibers.
- Return the tamarind liquid to the pot and add fish sauce, sugar, and salt. Bring to a simmer.
- Add the fish, tomatoes, pineapple, and okra. Cook for 10 minutes.
- Add bean sprouts and chilies, cook for an additional 5 minutes.
- Remove from heat, garnish with cilantro, and serve hot with steamed rice.
