Canning Enchilada Sauce
Canning enchilada sauce is a great way to preserve the flavors of this delicious Mexican sauce for future use. Whether you grow your own chilies or simply want to make a large batch of enchilada sauce to have on hand, canning is a convenient method for long-term storage.
Ingredients
- 10 dried guajillo chilies
- 5 dried ancho chilies
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups vegetable broth
- 1/4 cup vegetable oil
Instructions
- Remove the stems and seeds from the dried chilies, then place them in a bowl and cover with boiling water. Let them soak for 20 minutes.
- While the chilies are soaking, heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, cumin, oregano, salt, and black pepper to the pot. Cook for 1-2 minutes until fragrant.
- Transfer the soaked chilies to a blender, along with the onion and spice mixture. Add the vegetable broth and blend until smooth.
- Pour the blended sauce back into the pot and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the sauce has thickened.
- Once the sauce has thickened, it is ready to be canned. Ladle the hot sauce into sterilized pint jars, leaving 1/2 inch of headspace. Wipe the jar rims, place the lids on top, and screw on the bands until fingertip tight.
- Process the jars in a boiling water bath for 15 minutes. Remove the jars and let them cool completely before storing in a cool, dark place.
