Canning Pulled Pork

Ingredients
- 4 lbs pork shoulder, trimmed and cut into chunks
- 1 cup BBQ sauce
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place the pork chunks in a slow cooker.
- In a bowl, mix together the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Pour the sauce over the pork and stir to coat the meat evenly.
- Cover and cook on low for 8 hours, or until the pork is very tender.
- Once the pork is cooked, use a fork to shred it directly in the slow cooker, mixing it with the cooking juices.
- Transfer the pulled pork and cooking juices to clean, sterilized canning jars, leaving 1 inch of headspace.
- Wipe the jar rims, place the lids and rings on the jars, and process in a pressure canner according to the manufacturer's instructions.
- Once processed, remove the jars from the canner and let them cool. Check the seals before storing.
