Ingredients

  • 4 lbs pork shoulder, trimmed and cut into chunks
  • 1 cup BBQ sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place the pork chunks in a slow cooker.
  2. In a bowl, mix together the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Pour the sauce over the pork and stir to coat the meat evenly.
  4. Cover and cook on low for 8 hours, or until the pork is very tender.
  5. Once the pork is cooked, use a fork to shred it directly in the slow cooker, mixing it with the cooking juices.
  6. Transfer the pulled pork and cooking juices to clean, sterilized canning jars, leaving 1 inch of headspace.
  7. Wipe the jar rims, place the lids and rings on the jars, and process in a pressure canner according to the manufacturer's instructions.
  8. Once processed, remove the jars from the canner and let them cool. Check the seals before storing.
