Ingredients
- 1 kg beef cheeks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- 1 celery stalk, chopped
- 1 bay leaf
- 500ml beef stock
- 250ml red wine
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the beef cheeks with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Sear the beef cheeks until browned on all sides. Remove and set aside.
- Lower the heat to medium and add the onions, garlic, carrots, and celery to the pot. Cook until softened.
- Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
- Return the beef cheeks to the pot and add the bay leaf and beef stock. Bring to a simmer, then cover and cook for 3 hours, or until the meat is tender.
- Once the beef cheeks are tender, remove them from the pot and set aside. Simmer the sauce until it thickens slightly.
- Return the beef cheeks to the pot and heat through. Season with salt and pepper to taste.
- Serve the Carrilleras de Ternera a la Cántabra with your choice of side dishes.
