Ingredients
- 1.5 lbs (700g) beef sirloin, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- For the marinade:
- 3 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon paprika
- Salt and pepper to taste
- For the chimichurri sauce:
- 1 cup (240ml) fresh parsley, chopped
- 4 cloves garlic, minced
- 1/4 cup (60ml) red wine vinegar
- 1/2 cup (120ml) olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a bowl, combine the marinade ingredients and add the beef cubes. Marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated beef, bell peppers, and onion onto skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
- While the skewers are grilling, prepare the chimichurri sauce by combining all the ingredients in a bowl.
- Serve the beef skewers with the chimichurri sauce on the side.
