Ingredients

  • 1.5 lbs (700g) beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • For the marinade:
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • For the chimichurri sauce:
  • 1 cup (240ml) fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) red wine vinegar
  • 1/2 cup (120ml) olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the marinade ingredients and add the beef cubes. Marinate for at least 1 hour in the refrigerator.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated beef, bell peppers, and onion onto skewers.
  4. Grill the skewers for 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
  5. While the skewers are grilling, prepare the chimichurri sauce by combining all the ingredients in a bowl.
