Cantabrian Style Beef Stew (Estofado de Ternera a la Cántabra)

Ingredients

  • 2 lbs (900g) beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup red wine
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the onion and garlic. Cook until softened, about 5 minutes.
  3. Stir in the carrots, potatoes, and red bell pepper. Cook for another 5 minutes.
  4. Return the beef to the pot and add the diced tomatoes, beef broth, red wine, paprika, cumin, salt, and pepper.
  5. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 2 hours, or until the beef is tender.
  6. Adjust the seasoning if needed, and serve the stew hot.
