Cantabrian Style Beef Stew (Estofado de Ternera a la Cántabra)
Estofado de Ternera a la Cántabra, or Cantabrian Style Beef Stew, is a traditional dish from the Cantabria region of Spain. This hearty and flavorful stew is perfect for warming up on a cold day, and it's packed with tender beef and a rich tomato-based sauce.
Ingredients
- 2 lbs (900g) beef stew meat, cut into chunks
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1/2 cup red wine
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion and garlic. Cook until softened, about 5 minutes.
- Stir in the carrots, potatoes, and red bell pepper. Cook for another 5 minutes.
- Return the beef to the pot and add the diced tomatoes, beef broth, red wine, paprika, cumin, salt, and pepper.
- Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 2 hours, or until the beef is tender.
- Adjust the seasoning if needed, and serve the stew hot.
