Cantabrian Style Chicken Casserole (Pollo a la Cántabra)

Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken thighs with salt, pepper, paprika, and cumin.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Cook until softened.
  4. Add the sliced bell peppers and cook until they start to soften.
  5. Pour in the white wine and let it simmer for a few minutes.
  6. Add the diced tomatoes and return the chicken thighs to the skillet.
  7. Cover and let it simmer for 45 minutes, or until the chicken is cooked through.
  8. Adjust the seasoning and serve hot.
