Ingredients
- 4 chicken thighs
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup white wine
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the chicken thighs with salt, pepper, paprika, and cumin.
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Cook until softened.
- Add the sliced bell peppers and cook until they start to soften.
- Pour in the white wine and let it simmer for a few minutes.
- Add the diced tomatoes and return the chicken thighs to the skillet.
- Cover and let it simmer for 45 minutes, or until the chicken is cooked through.
- Adjust the seasoning and serve hot.
