Cantabrian Style Pork Chops (Chuletas de Cerdo a la Cántabra)

Ingredients

  • 4 pork chops
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the pork chops with salt, pepper, and paprika.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and cook until browned, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.
  3. In the same skillet, add the diced onion, garlic, and red bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  4. Pour in the white wine and let it simmer for 2 minutes, then add the diced tomatoes. Stir to combine.
  5. Return the pork chops to the skillet, nestling them into the sauce. Cover and simmer for 15-20 minutes, or until the pork chops are cooked through.
  6. Serve the pork chops with the sauce spooned over them.
