Cantabrian Style Pork Ribs (Costillas de Cerdo a la Cántabra)

Ingredients

  • 2 lbs pork ribs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the pork ribs with salt, pepper, and paprika.
  3. In a large Dutch oven, brown the ribs on all sides over medium-high heat.
  4. Remove the ribs from the pot and set aside.
  5. Add the chopped onion to the pot and cook until softened.
  6. Stir in the garlic, tomato paste, and thyme, and cook for 1-2 minutes.
  7. Pour in the white wine and chicken broth, and bring to a simmer.
  8. Return the ribs to the pot, cover, and transfer to the preheated oven.
  9. Bake for 1.5 to 2 hours, or until the ribs are tender.
  10. Remove the ribs from the pot and set aside.
  11. Skim off any fat from the sauce and simmer until thickened.
  12. Return the ribs to the pot and coat with the sauce.
  13. Serve the ribs hot, with the sauce spooned over the top.
