Ingredients
- 8 fresh sardines, cleaned and gutted

Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the diced tomatoes, paprika, salt, and pepper. Cook for 10 minutes, stirring occasionally.
- Place the cleaned sardines in the skillet, spooning the tomato mixture over them.
- Cover and simmer for 10-15 minutes, or until the sardines are cooked through.
- Transfer the sardines to a serving platter, spoon the tomato sauce over them, and garnish with fresh parsley.
