Ingredients
- 500g fresh tuna, cut into chunks
- 500g potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 200g fresh tomatoes, chopped
- 200ml fish or seafood stock
- 100ml white wine
- 150g green peas
- 1 bay leaf
- 1 tsp sweet paprika
- Salt and pepper to taste
- Extra virgin olive oil
Instructions
- In a large pot, heat some olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Add the tomatoes, bay leaf, and sweet paprika. Cook for a few minutes until the tomatoes break down and release their juices.
- Pour in the white wine and let it reduce slightly.
- Add the potatoes and fish stock to the pot. Bring to a simmer and cook for about 15 minutes, or until the potatoes are almost tender.
- Add the tuna chunks and green peas to the pot. Season with salt and pepper. Simmer for an additional 10-15 minutes, or until the tuna is cooked through.
- Adjust the seasoning if needed and serve the Marmitako de Mariscos a la Cántabra hot, garnished with fresh parsley if desired.
