Cantabrian Style Seafood Rice (Arroz de Mariscos a la Cántabra)

Ingredients

  • 1 cup Bomba or Arborio rice
  • 1/2 lb fresh clams
  • 1/2 lb fresh mussels
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb squid, cleaned and sliced into rings
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, grated
  • 1/2 cup white wine
  • 4 cups fish or seafood broth
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
  2. Stir in the grated tomatoes and cook for a few minutes until the mixture thickens.
  3. Add the rice and sweet paprika to the pan, stirring to coat the rice with the vegetable mixture.
  4. Pour in the white wine and let it simmer for a couple of minutes until the alcohol evaporates.
  5. Gradually add the fish or seafood broth to the pan, stirring gently. Let the rice cook over medium heat for about 15-18 minutes.
  6. While the rice is cooking, in a separate pot, steam the clams and mussels until they open. Discard any unopened ones.
  7. Once the rice is almost done, arrange the shrimp and squid on top of the rice. Place the steamed clams and mussels around the pan.
  8. Cover the pan with a lid or aluminum foil and let the seafood cook for an additional 5-7 minutes, or until the shrimp turns pink and the squid is tender.
  9. Remove the pan from the heat and let it rest for a few minutes. Garnish with fresh parsley before serving.
