Cantabrian Style Seafood Rice (Arroz de Mariscos a la Cántabra)
Arroz de Mariscos a la Cántabra, or Cantabrian Style Seafood Rice, is a traditional dish from the Cantabria region of Spain. This flavorful and aromatic rice dish is packed with a variety of fresh seafood, making it a perfect choice for a special occasion or a family gathering.
Ingredients
- 1 cup Bomba or Arborio rice
- 1/2 lb fresh clams
- 1/2 lb fresh mussels
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb squid, cleaned and sliced into rings
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, grated
- 1/2 cup white wine
- 4 cups fish or seafood broth
- 1/4 cup extra virgin olive oil
- 1 teaspoon sweet paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
- Stir in the grated tomatoes and cook for a few minutes until the mixture thickens.
- Add the rice and sweet paprika to the pan, stirring to coat the rice with the vegetable mixture.
- Pour in the white wine and let it simmer for a couple of minutes until the alcohol evaporates.
- Gradually add the fish or seafood broth to the pan, stirring gently. Let the rice cook over medium heat for about 15-18 minutes.
- While the rice is cooking, in a separate pot, steam the clams and mussels until they open. Discard any unopened ones.
- Once the rice is almost done, arrange the shrimp and squid on top of the rice. Place the steamed clams and mussels around the pan.
- Cover the pan with a lid or aluminum foil and let the seafood cook for an additional 5-7 minutes, or until the shrimp turns pink and the squid is tender.
- Remove the pan from the heat and let it rest for a few minutes. Garnish with fresh parsley before serving.
