Ingredients
- 500g mixed seafood (such as shrimp, mussels, and squid)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon paprika
- 1 bay leaf
- 1 liter fish or seafood stock
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced bell peppers and tomatoes to the pot, and cook until the vegetables are tender.
- Stir in the paprika and bay leaf, then pour in the fish or seafood stock. Bring the soup to a simmer.
- Add the mixed seafood to the pot, and simmer for 10-15 minutes until the seafood is cooked through.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf, and ladle the Sopa de Mariscos into bowls. Garnish with fresh parsley before serving.
