Cantabrian Style Squid (Calamares a la Cántabra)

Ingredients

  • 1 lb (450g) fresh squid, cleaned and sliced into rings
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1/2 cup (120ml) white wine
  • 1 can (14 oz/400g) crushed tomatoes
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the red bell pepper and cook for another 2-3 minutes.
  3. Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
  4. Stir in the crushed tomatoes, paprika, salt, and pepper. Simmer for 10 minutes.
  5. Add the sliced squid to the skillet and cook for 5-7 minutes, until the squid is tender.
  6. Sprinkle with fresh parsley and serve hot.
