Ingredients
- 1 lb (450g) fresh squid, cleaned and sliced into rings
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1/2 cup (120ml) white wine
- 1 can (14 oz/400g) crushed tomatoes
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
- Add the red bell pepper and cook for another 2-3 minutes.
- Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
- Stir in the crushed tomatoes, paprika, salt, and pepper. Simmer for 10 minutes.
- Add the sliced squid to the skillet and cook for 5-7 minutes, until the squid is tender.
- Sprinkle with fresh parsley and serve hot.
