Cantabrian Style Stuffed Potatoes (Patatas Rellenas a la Cántabra)

Ingredients

  • 4 large potatoes
  • 1 onion, finely chopped
  • 200g ground beef
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup grated cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Add the red bell pepper, peas, garlic, paprika, salt, and pepper. Cook for an additional 5 minutes.
  5. Once the potatoes are cooked, carefully slice off the top third of each potato. Scoop out the flesh and transfer it to a bowl, leaving a shell about 1/4 inch thick.
  6. Mash the potato flesh and mix it with the cooked beef mixture. Spoon the filling back into the potato shells and top with grated cheese.
  7. Place the stuffed potatoes on a baking sheet and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
