Cantabrian Style Stuffed Potatoes (Patatas Rellenas a la Cántabra)

Ingredients
- 4 large potatoes
- 1 onion, finely chopped
- 200g ground beef
- 1 red bell pepper, diced
- 1 cup frozen peas
- 2 garlic cloves, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup olive oil
- 1/2 cup grated cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened.
- Add the ground beef to the skillet and cook until browned. Add the red bell pepper, peas, garlic, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Once the potatoes are cooked, carefully slice off the top third of each potato. Scoop out the flesh and transfer it to a bowl, leaving a shell about 1/4 inch thick.
- Mash the potato flesh and mix it with the cooked beef mixture. Spoon the filling back into the potato shells and top with grated cheese.
- Place the stuffed potatoes on a baking sheet and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
