Cantabrian Style Tuna Empanadas (Empanadas de Atún a la Cántabra)

Ingredients

  • 2 cans of tuna, drained
  • 1 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup pitted green olives, chopped
  • 1/4 cup tomato sauce
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 sheets of store-bought pie crust dough

Instructions

  1. In a large bowl, mix the tuna, onion, red bell pepper, green bell pepper, hard-boiled eggs, olives, tomato sauce, paprika, salt, and pepper.
  2. Roll out the pie crust dough and cut it into circles using a round cutter.
  3. Place a spoonful of the tuna mixture onto each circle of dough.
  4. Fold the dough over the filling to create a half-moon shape and press the edges to seal.
  5. Place the empanadas on a baking sheet and bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.
  6. Remove from the oven and let cool for a few minutes before serving.
