Cape Malay Chicken Biryani

Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 2 onions, thinly sliced
- 3 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tbsp biryani spice mix
- 1/4 cup vegetable oil
- 1/4 cup butter
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil and butter. Add the sliced onions and cook until golden brown.
- Add the chicken pieces and biryani spice mix to the pot. Cook until the chicken is browned.
- Stir in the chopped tomatoes and plain yogurt. Cook for 5 minutes.
- Drain the soaked rice and add it to the pot. Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Sprinkle the raisins and slivered almonds over the rice. Cover the pot and cook for an additional 10 minutes, or until the rice is tender and the chicken is cooked through.
- Fluff the biryani with a fork before serving.
