Cape Malay Curry
Cape Malay Curry is a traditional South African dish with a unique blend of spices and flavors. This curry is a staple in Cape Malay cuisine and is known for its aromatic and rich taste.
Ingredients
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp Cape Malay curry powder
- 1 tsp ground turmeric
- 1 cinnamon stick
- 4 chicken thighs, skinless and bone-in
- 2 large potatoes, peeled and cubed
- 2 large carrots, peeled and sliced
- 1 can (400g) chopped tomatoes
- 1 cup chicken stock
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the Cape Malay curry powder, turmeric, and cinnamon stick. Cook for 1-2 minutes until fragrant.
- Add the chicken thighs and brown on all sides.
- Stir in the potatoes, carrots, chopped tomatoes, and chicken stock. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat and simmer for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the cinnamon stick and serve the Cape Malay Curry hot, garnished with fresh cilantro.
