Cape Malay Curry

Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp Cape Malay curry powder
  • 1 tsp ground turmeric
  • 1 cinnamon stick
  • 4 chicken thighs, skinless and bone-in
  • 2 large potatoes, peeled and cubed
  • 2 large carrots, peeled and sliced
  • 1 can (400g) chopped tomatoes
  • 1 cup chicken stock
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Stir in the Cape Malay curry powder, turmeric, and cinnamon stick. Cook for 1-2 minutes until fragrant.
  4. Add the chicken thighs and brown on all sides.
  5. Stir in the potatoes, carrots, chopped tomatoes, and chicken stock. Season with salt and pepper.
  6. Bring the curry to a boil, then reduce the heat and simmer for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Remove the cinnamon stick and serve the Cape Malay Curry hot, garnished with fresh cilantro.
