Cape Malay Lamb Curry

Ingredients

  • 2 lbs lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp Cape Malay curry powder
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 cup beef or lamb broth
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
  2. Add the Cape Malay curry powder, cinnamon stick, and cardamom pods. Cook for 2-3 minutes until fragrant.
  3. Add the lamb cubes and brown on all sides.
  4. Pour in the beef or lamb broth and bring to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
  5. Add the chopped tomatoes and coconut milk. Simmer for an additional 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the Cape Malay Lamb Curry hot with steamed rice or fresh bread.
