Ingredients
- 2 lbs lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 tbsp Cape Malay curry powder
- 1 cinnamon stick
- 4 cardamom pods
- 1 cup beef or lamb broth
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
- Add the Cape Malay curry powder, cinnamon stick, and cardamom pods. Cook for 2-3 minutes until fragrant.
- Add the lamb cubes and brown on all sides.
- Pour in the beef or lamb broth and bring to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
- Add the chopped tomatoes and coconut milk. Simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve the Cape Malay Lamb Curry hot with steamed rice or fresh bread.
