Caramel Pudding (pudim Flan)

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 4 large eggs
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the granulated sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns into a deep amber caramel. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.
  2. Preheat the oven to 350°F (175°C).
  3. In a large bowl, whisk the eggs until well combined. Add the sweetened condensed milk, whole milk, and vanilla extract. Whisk until smooth.
  4. Pour the mixture over the hardened caramel in the baking dish.
  5. Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish.
  6. Bake for 50-60 minutes, or until the pudding is set but still slightly jiggly in the center.
  7. Remove the baking dish from the water bath and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.
  8. To serve, run a knife around the edge of the pudding and invert it onto a serving platter. The caramel sauce will flow over the top of the pudding.
