Caramel Sandwich Cookies (dulce De Leche Delight: Alfajores)

Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (60g) cornstarch
  • 1 teaspoon baking powder
  • 1 cup (300g) dulce de leche
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg yolks and vanilla extract until well combined.
  3. In a separate bowl, sift together the flour, cornstarch, and baking powder.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out rounds of dough.
  6. Place the dough rounds on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 8-10 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool completely. Then, spread a generous amount of dulce de leche on the bottom side of half of the cookies.
  8. Top with the remaining cookies to create sandwich cookies.
  9. Dust the assembled cookies with powdered sugar before serving.
