Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 2 eggs
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 4 ripe bananas, sliced
- 1/2 cup brown sugar
- 4 tablespoons unsalted butter
Instructions
- In a blender, combine the flour, milk, eggs, sugar, and salt. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour 1/4 cup of the batter into the skillet, swirling to spread evenly. Cook for 2 minutes, then flip and cook for an additional 1 minute. Repeat with the remaining batter to make 8 crepes.
- In a separate skillet, melt the butter over medium heat. Add the brown sugar and stir until dissolved.
- Add the sliced bananas to the skillet and cook for 2-3 minutes, until caramelized.
- Spoon the caramelized bananas onto each crepe, fold or roll them, and serve warm.
