Caramelized Banana Crepes (Crepes de Plátano Caramelizado)

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 4 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 4 tablespoons unsalted butter

Instructions

  1. In a blender, combine the flour, milk, eggs, sugar, and salt. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter.
  3. Pour 1/4 cup of the batter into the skillet, swirling to spread evenly. Cook for 2 minutes, then flip and cook for an additional 1 minute. Repeat with the remaining batter to make 8 crepes.
  4. In a separate skillet, melt the butter over medium heat. Add the brown sugar and stir until dissolved.
  5. Add the sliced bananas to the skillet and cook for 2-3 minutes, until caramelized.
  6. Spoon the caramelized bananas onto each crepe, fold or roll them, and serve warm.
