Caramelized Onion And Goat Cheese Empanadas

Ingredients

  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled goat cheese
  • 2 sheets of store-bought puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, and black pepper. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes. Remove from heat and let cool.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Roll out the puff pastry sheets and cut each sheet into 6 equal squares.
  4. Place a spoonful of the caramelized onions and a sprinkle of goat cheese in the center of each pastry square.
