Ingredients
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tsp sugar
- 1 sheet of puff pastry
- 1/2 cup black olives, pitted
- 6 anchovy fillets
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 20-25 minutes.
- Sprinkle the sugar over the onions and continue to cook, stirring occasionally, until the onions are caramelized, about 10-15 minutes. Season with salt and pepper, then set aside to cool.
- Roll out the puff pastry on a lightly floured surface to fit a baking sheet. Transfer the pastry to the baking sheet.
- Spoon the caramelized onions over the pastry, leaving a border around the edges. Arrange the olives and anchovy fillets on top of the onions. Sprinkle with dried thyme.
- Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm or at room temperature.
