Thịt kho trứng, or Caramelized Pork and Egg, is a classic Vietnamese dish that features tender pork belly and hard-boiled eggs braised in a flavorful and sweet caramel sauce. This dish is often enjoyed with steamed white rice, making it a comforting and satisfying meal.
Ingredients
- 1 lb pork belly, cut into 1-inch cubes
- 6 hard-boiled eggs, peeled
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup fish sauce
- 1/4 cup sugar
- 1/4 cup coconut water
- 1/4 cup water
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the pork belly to the pot and cook until browned on all sides.
- Sprinkle the sugar over the pork and continue cooking until the sugar caramelizes and coats the pork.
- Pour in the fish sauce, coconut water, and water. Stir to combine, then bring the mixture to a simmer.
- Add the hard-boiled eggs to the pot, nestling them among the pork pieces.
- Cover the pot and simmer for 45-50 minutes, or until the pork is tender and the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the Thịt kho trứng hot with steamed white rice.
