Ingredients

  • 4 large artichokes
  • 2 lemons
  • 2 cups vegetable oil for frying
  • Salt to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and cutting off the top third of each artichoke.
  2. Use a spoon to remove the choke (the fuzzy center) from each artichoke.
  3. Place the cleaned artichokes in a bowl of water with the juice of 2 lemons to prevent browning.
  4. Heat the vegetable oil in a large pot over medium heat.
  5. Carefully add the artichokes to the hot oil and fry until golden and crispy, about 8-10 minutes.
  6. Remove the fried artichokes from the oil and place them on a paper towel to drain excess oil.
  7. Sprinkle with salt to taste and serve hot.
