Ingredients
- 4 large artichokes
- 2 lemons
- 2 cups vegetable oil for frying
- Salt to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and cutting off the top third of each artichoke.
- Use a spoon to remove the choke (the fuzzy center) from each artichoke.
- Place the cleaned artichokes in a bowl of water with the juice of 2 lemons to prevent browning.
- Heat the vegetable oil in a large pot over medium heat.
- Carefully add the artichokes to the hot oil and fry until golden and crispy, about 8-10 minutes.
- Remove the fried artichokes from the oil and place them on a paper towel to drain excess oil.
- Sprinkle with salt to taste and serve hot.
