Roman-Style Artichokes, or Carciofi alla Romana, is a classic dish from the Lazio region of Italy. This recipe features tender artichokes braised in a flavorful mixture of herbs and spices, resulting in a delicious and aromatic dish.
Ingredients
- 4 large artichokes
- 1 lemon, halved
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the top. Rub the cut surfaces with lemon to prevent browning.
- In a bowl, mix together the garlic, parsley, mint, and olive oil. Season with salt and pepper.
- Spread the artichoke leaves apart and stuff the herb mixture between the leaves.
- Place the stuffed artichokes in a pot and add enough water to reach halfway up the artichokes. Squeeze the remaining lemon over the artichokes and add the lemon halves to the pot.
- Cover the pot and simmer the artichokes for 30 minutes, or until tender.
- Serve the Roman-Style Artichokes hot or at room temperature.
