Carciofi alla Romana (Roman-Style Artichokes)

Ingredients

  • 4 large artichokes
  • 1 lemon, halved
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the top. Rub the cut surfaces with lemon to prevent browning.
  2. In a bowl, mix together the garlic, parsley, mint, and olive oil. Season with salt and pepper.
  3. Spread the artichoke leaves apart and stuff the herb mixture between the leaves.
  4. Place the stuffed artichokes in a pot and add enough water to reach halfway up the artichokes. Squeeze the remaining lemon over the artichokes and add the lemon halves to the pot.
  5. Cover the pot and simmer the artichokes for 30 minutes, or until tender.
  6. Serve the Roman-Style Artichokes hot or at room temperature.
