Ingredients

  • 4 large artichokes
  • 1 cup breadcrumbs
  • 1/2 cup grated pecorino cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and cutting off the top third of each artichoke. Use a spoon to remove the choke from the center.
  2. In a bowl, mix together the breadcrumbs, pecorino cheese, garlic, parsley, mint, and olive oil. Season with salt and pepper.
  3. Stuff the breadcrumb mixture into the center of each artichoke, pressing it down firmly.
  4. Place the stuffed artichokes in a large pot and add enough water to reach halfway up the sides of the artichokes. Drizzle with additional olive oil and season with salt.
  5. Cover the pot and cook the artichokes over medium heat for 45 minutes, or until tender.
  6. Once cooked, remove the artichokes from the pot and let them cool slightly before serving.
