Ingredients
- 4 large artichokes
- 1 cup breadcrumbs
- 1/2 cup grated pecorino cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and cutting off the top third of each artichoke. Use a spoon to remove the choke from the center.
- In a bowl, mix together the breadcrumbs, pecorino cheese, garlic, parsley, mint, and olive oil. Season with salt and pepper.
- Stuff the breadcrumb mixture into the center of each artichoke, pressing it down firmly.
- Place the stuffed artichokes in a large pot and add enough water to reach halfway up the sides of the artichokes. Drizzle with additional olive oil and season with salt.
- Cover the pot and cook the artichokes over medium heat for 45 minutes, or until tender.
- Once cooked, remove the artichokes from the pot and let them cool slightly before serving.
