Cardiff Castle Curry

Ingredients
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp chili powder
- 1 can (400g) chopped tomatoes
- 1 can (400g) chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, turmeric, garam masala, and chili powder. Cook for 1-2 minutes until fragrant.
- Pour in the chopped tomatoes, chickpeas, and vegetable broth. Bring to a simmer and cook for 30 minutes, stirring occasionally.
- Add the frozen peas and continue to simmer for an additional 10 minutes.
- Season with salt and pepper to taste. Serve the Cardiff Castle Curry hot, garnished with fresh cilantro.
