Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 tsp chili powder
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, garam masala, and chili powder. Cook for 1-2 minutes until fragrant.
  3. Pour in the chopped tomatoes, chickpeas, and vegetable broth. Bring to a simmer and cook for 30 minutes, stirring occasionally.
  4. Add the frozen peas and continue to simmer for an additional 10 minutes.
  5. Season with salt and pepper to taste. Serve the Cardiff Castle Curry hot, garnished with fresh cilantro.
