Caribbean Bbq Shrimp Dumplings

Ingredients
- 1 lb shrimp, peeled and deveined
- 1/4 cup Caribbean BBQ sauce
- 1/4 cup green onions, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1/4 cup water chestnuts, finely chopped
- 20 dumpling wrappers
- 2 tbsp vegetable oil
Instructions
- In a bowl, mix the shrimp, Caribbean BBQ sauce, green onions, bell pepper, and water chestnuts.
- Place a spoonful of the shrimp mixture in the center of each dumpling wrapper.
- Moisten the edges of the wrapper with water, then fold and pleat to seal the dumplings.
- Heat the vegetable oil in a large skillet over medium heat.
- Place the dumplings in the skillet and cook for 2-3 minutes until the bottoms are golden brown.
- Add 1/4 cup of water to the skillet, cover, and steam the dumplings for 5 minutes.
- Remove the cover and continue cooking for another 2-3 minutes until the water has evaporated.
- Transfer the dumplings to a serving plate and serve hot.
