Caribbean Black Bean Soup

Ingredients
- 2 cans (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook until the vegetables are softened, about 5 minutes.
- Add the cumin and chili powder to the pot and cook for another 2 minutes, stirring constantly.
- Pour in the vegetable broth and black beans. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Use an immersion blender to partially blend the soup, leaving some whole beans for texture. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
- Season the soup with salt and pepper to taste. Serve hot and enjoy!
