Caribbean Black Bean Soup

Ingredients

  • 2 cans (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook until the vegetables are softened, about 5 minutes.
  2. Add the cumin and chili powder to the pot and cook for another 2 minutes, stirring constantly.
  3. Pour in the vegetable broth and black beans. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Use an immersion blender to partially blend the soup, leaving some whole beans for texture. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  5. Season the soup with salt and pepper to taste. Serve hot and enjoy!
