Ingredients
- 1 lb mixed dried fruit (raisins, currants, prunes)
- 1 cup rum
- 1 cup butter
- 1 cup brown sugar
- 4 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp mixed spice (cinnamon, nutmeg, allspice)
- 1/4 cup breadcrumbs
- 1/4 cup cherry brandy
Instructions
- Soak the mixed dried fruit in rum for at least 24 hours.
- Cream the butter and sugar together in a large bowl.
- Add the eggs one at a time, beating well after each addition.
- Sift the flour, baking powder, and mixed spice together.
- Fold the dry ingredients into the creamed mixture.
- Add the soaked fruit and breadcrumbs, then stir in the cherry brandy.
- Pour the batter into a greased and lined cake tin.
- Bake in a preheated oven at 325°F for 2 hours, or until a skewer inserted into the center comes out clean.
- Allow the cake to cool before serving.
