Caribbean Ceviche (Ceviche Caribeño)

Ingredients

  • 1 lb fresh white fish, such as sea bass or snapper, diced
  • 1 cup lime juice
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 cup coconut milk
  • 1 mango, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the acidity of the lime juice.
  2. Once the fish is "cooked," drain off the excess lime juice.
  3. Add the red onion, bell pepper, jalapeño, and coconut milk to the fish. Mix gently to combine.
  4. Gently fold in the diced mango and chopped cilantro. Season with salt and pepper to taste.
  5. Refrigerate the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
