Caribbean Ceviche (Ceviche Caribeño)
Ceviche Caribeño, also known as Caribbean Ceviche, is a popular dish in Honduran cuisine. This refreshing and flavorful seafood dish is perfect for a light and healthy meal, especially during the hot summer months.
Ingredients
- 1 lb fresh white fish, such as sea bass or snapper, diced
- 1 cup lime juice
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 cup coconut milk
- 1 mango, diced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the acidity of the lime juice.
- Once the fish is "cooked," drain off the excess lime juice.
- Add the red onion, bell pepper, jalapeño, and coconut milk to the fish. Mix gently to combine.
- Gently fold in the diced mango and chopped cilantro. Season with salt and pepper to taste.
- Refrigerate the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
