Caribbean Coconut Shrimp Curry

Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 tbsp chopped fresh cilantro, for garnish
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until softened, about 3 minutes.
- Add the minced garlic, curry powder, turmeric, cumin, paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir to combine with the spices.
- Add the sliced red bell pepper and simmer for 5 minutes.
- Add the shrimp to the skillet and cook for 5-7 minutes, or until they turn pink and opaque.
- Garnish with chopped cilantro before serving.
