Caribbean Conch Fritters

Ingredients

  • 1 lb fresh conch, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, finely chopped
  • 2 green onions, finely chopped
  • 1 hot pepper, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup milk
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the chopped conch, flour, cornmeal, onion, garlic, bell pepper, green onions, hot pepper, parsley, salt, black pepper, and paprika.
  2. In a separate bowl, whisk together the milk and beaten eggs.
  3. Pour the milk and egg mixture into the conch mixture and stir until well combined.
  4. Heat vegetable oil in a deep skillet over medium heat.
  5. Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. Remove the fritters from the oil and drain on paper towels.
