Ingredients
- 1 lb fresh conch, finely chopped
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 bell pepper, finely chopped
- 2 green onions, finely chopped
- 1 hot pepper, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup milk
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- In a large bowl, combine the chopped conch, flour, cornmeal, onion, garlic, bell pepper, green onions, hot pepper, parsley, salt, black pepper, and paprika.
- In a separate bowl, whisk together the milk and beaten eggs.
- Pour the milk and egg mixture into the conch mixture and stir until well combined.
- Heat vegetable oil in a deep skillet over medium heat.
- Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
