Caribbean Curry Chicken Roti

Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 2 tbsp Caribbean curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup coconut milk
- 2 tomatoes, diced
- 1 cup chicken broth
- 1 tbsp vegetable oil
- Salt and pepper to taste
- 4 roti breads
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the chicken thighs to the pot and cook until browned on all sides.
- Sprinkle the Caribbean curry powder over the chicken and stir to coat the meat evenly.

- Simmer the curry chicken mixture for 30 minutes, or until the chicken is tender and the sauce has thickened.
- Warm the roti breads according to package instructions.
