Caribbean Curry Chicken Roti

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tbsp Caribbean curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 cup chicken broth
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • 4 roti breads

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the chicken thighs to the pot and cook until browned on all sides.
  3. Sprinkle the Caribbean curry powder over the chicken and stir to coat the meat evenly.
  4. Pour in the coconut milk and chicken broth, then add the diced tomatoes. Season with salt and pepper to taste.
  5. Simmer the curry chicken mixture for 30 minutes, or until the chicken is tender and the sauce has thickened.
