Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tbsp curry powder

- 2 cups coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the goat meat, curry powder, onion, garlic, thyme, allspice, scotch bonnet pepper, salt, and pepper. Mix well and let it marinate for at least 1 hour.
- Heat the vegetable oil in a large pot over medium heat. Add the marinated goat meat and brown on all sides.
- Pour in the coconut milk and bring to a simmer. Cover the pot and let it cook for 1.5 to 2 hours, or until the goat meat is tender.
- Adjust the seasoning if needed and serve the Caribbean Curry Goat hot with rice or roti.
