Ingredients

  • 2 lbs boneless chicken thighs, cut into chunks
  • 1 cup coconut milk
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 scotch bonnet pepper, seeded and minced
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups cooked rice for serving

Instructions

  1. In a large bowl, combine the chicken chunks with coconut milk, curry powder, thyme, paprika, minced scotch bonnet pepper, salt, and pepper. Marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add the marinated chicken and cook until browned, about 5 minutes.
  3. Add the sliced bell peppers, onion, and garlic to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.
