Ingredients
- 2 lbs boneless chicken thighs, cut into chunks
- 1 cup coconut milk
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- 1 scotch bonnet pepper, seeded and minced
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups cooked rice for serving
Instructions
- In a large bowl, combine the chicken chunks with coconut milk, curry powder, thyme, paprika, minced scotch bonnet pepper, salt, and pepper. Marinate for 15 minutes.
- Heat vegetable oil in a large skillet over medium heat. Add the marinated chicken and cook until browned, about 5 minutes.
- Add the sliced bell peppers, onion, and garlic to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.
