Ingredients

  • 2 lbs chicken thighs, bone-in
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 scotch bonnet pepper, diced
  • 1 bell pepper, sliced
  • 1 cup diced tomatoes
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and scotch bonnet pepper, and sauté until fragrant.
  2. Add the chicken thighs to the pot and brown on all sides.
  3. Stir in the curry powder and cook for 2 minutes to toast the spices.
  4. Pour in the coconut milk and diced tomatoes, then add the bell pepper. Season with salt and pepper.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Serve the Caribbean Delight over steamed rice and enjoy!
