Ingredients
- 2 lbs chicken thighs, bone-in
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, diced
- 1 bell pepper, sliced
- 1 cup diced tomatoes
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and scotch bonnet pepper, and sauté until fragrant.
- Add the chicken thighs to the pot and brown on all sides.
- Stir in the curry powder and cook for 2 minutes to toast the spices.
- Pour in the coconut milk and diced tomatoes, then add the bell pepper. Season with salt and pepper.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the Caribbean Delight over steamed rice and enjoy!
