Caribbean Jerk Chicken

Ingredients

  • 4 chicken thighs
  • 2 tbsp Caribbean jerk seasoning
  • 2 tbsp olive oil
  • 1 lime, juiced

  • 1 tsp black pepper
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper, finely chopped
  • 1/4 cup chicken broth

Instructions

  1. Season the chicken thighs with Caribbean jerk seasoning, salt, and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and cook until browned on both sides, about 5 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced onion, garlic, bell pepper, and scotch bonnet pepper. Cook for 3-4 minutes until the vegetables are slightly softened.
  5. Return the chicken to the skillet and pour in the chicken broth and lime juice. Cover and simmer for 15-20 minutes until the chicken is cooked through.
  6. Serve the Caribbean Jerk Chicken hot, garnished with fresh cilantro and lime wedges.
