Ingredients
- 4 chicken thighs
- 2 tbsp Caribbean jerk seasoning

- 1 bell pepper, sliced
- 1 scotch bonnet pepper, finely chopped

Instructions
- Season the chicken thighs with Caribbean jerk seasoning, salt, and black pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and cook until browned on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion, garlic, bell pepper, and scotch bonnet pepper. Cook for 3-4 minutes until the vegetables are slightly softened.
- Return the chicken to the skillet and pour in the chicken broth and lime juice. Cover and simmer for 15-20 minutes until the chicken is cooked through.
