Caribbean Mango Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch. Set aside.
  2. Season the chicken breasts with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
