Caribbean Mango Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 teaspoon cornstarch
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch. Set aside.
- Season the chicken breasts with salt and pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
- Add the sliced onion and red bell pepper. Cook for 2-3 minutes until slightly softened.
- Stir in the diced mangoes and the soy sauce mixture. Cook for 2-3 minutes until the sauce thickens slightly.
- Return the cooked chicken to the skillet, coating it with the mango sauce. Cook for an additional 2-3 minutes to heat through.
