Caribbean Pineapple Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix soy sauce, brown sugar, and cornstarch. Set aside.
  2. Season chicken breasts with salt and pepper.
  3. In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic, ginger, red bell pepper, and onion. Cook for 3-4 minutes until vegetables are tender.
  5. Return the chicken to the skillet. Add the soy sauce mixture and pineapple chunks. Cook for another 5-7 minutes until the chicken is cooked through and the sauce has thickened.
