Caribbean Pineapple Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix soy sauce, brown sugar, and cornstarch. Set aside.
- Season chicken breasts with salt and pepper.
- In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add garlic, ginger, red bell pepper, and onion. Cook for 3-4 minutes until vegetables are tender.
- Return the chicken to the skillet. Add the soy sauce mixture and pineapple chunks. Cook for another 5-7 minutes until the chicken is cooked through and the sauce has thickened.
- Serve the Caribbean Pineapple Chicken hot with steamed rice or noodles.
