Caribbean Pineapple Fried Rice

Ingredients

  • 3 cups cooked white rice
  • 1 cup diced pineapple
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
  3. Heat the remaining vegetable oil in the skillet. Add the onion, garlic, and red bell pepper. Cook until the vegetables are tender.
  4. Stir in the cooked rice, pineapple, frozen peas and carrots, soy sauce, and curry powder. Cook for 5-7 minutes, stirring occasionally.
  5. Add the scrambled eggs back to the skillet and stir to combine. Season with salt and pepper to taste.
  6. Once everything is heated through, remove from the heat and serve hot.
