Caribbean Pineapple Fried Rice

Ingredients
- 3 cups cooked white rice
- 1 cup diced pineapple
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon curry powder
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
- Heat the remaining vegetable oil in the skillet. Add the onion, garlic, and red bell pepper. Cook until the vegetables are tender.
- Stir in the cooked rice, pineapple, frozen peas and carrots, soy sauce, and curry powder. Cook for 5-7 minutes, stirring occasionally.
- Add the scrambled eggs back to the skillet and stir to combine. Season with salt and pepper to taste.
- Once everything is heated through, remove from the heat and serve hot.
