Caribbean Pumpkin Soup (Soupe de Citrouille des Caraïbes)

Ingredients
- 2 lbs Caribbean pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the diced pumpkin and thyme, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the coconut milk and season with salt and pepper to taste.
- Serve hot and enjoy!
