Caribbean Pumpkin Soup (Soupe de Citrouille des Caraïbes)

Ingredients

  • 2 lbs Caribbean pumpkin, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the diced pumpkin and thyme, and cook for 5 minutes, stirring occasionally.

  6. Stir in the coconut milk and season with salt and pepper to taste.
