Ingredients
- 1 lb mixed seafood (shrimp, mussels, squid)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 cups fish or seafood broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
- Add the tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and seafood broth. Bring to a simmer.
- Add the mixed seafood to the pot and cook for 8-10 minutes, or until the seafood is cooked through.
- Stir in the fresh cilantro and adjust the seasoning if needed.
