Caribbean Spiced Rum Ribs

Ingredients

  • 2 racks of pork ribs
  • 1/4 cup dark rum
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a small bowl, mix together the rum, brown sugar, paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and pepper to create the marinade.
  3. Place the ribs in a large roasting pan and pour the marinade over them, making sure to coat both sides.
  4. Cover the pan with aluminum foil and bake for 1.5 hours.
  5. Remove the foil and continue baking for another 30 minutes, basting the ribs with the pan juices every 10 minutes.
  6. Once the ribs are tender and caramelized, remove them from the oven and let them rest for a few minutes before serving.
