Ingredients
- 2 racks of pork ribs
- 1 cup dark rum
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 4 garlic cloves, minced
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- Place the ribs in a large roasting pan.
- In a bowl, mix together the rum, brown sugar, soy sauce, lime juice, minced garlic, allspice, ginger, paprika, cayenne pepper, salt, and pepper.
- Pour the marinade over the ribs, making sure to coat them evenly.
- Cover the pan with foil and let the ribs marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Bake the ribs in the preheated oven for 1.5 to 2 hours, or until tender, basting with the marinade every 30 minutes.
- Once cooked, remove the foil and broil the ribs for an additional 5-10 minutes to caramelize the glaze.
- Slice the ribs and serve hot, garnished with fresh lime wedges.
